Yum! We just had pancakes for dinner as it is Shrove Tuesday today. Lucy had some at school today and loved them, and I think ours were even more fun as she watched us take it in turns to flip them in the frying pan.

I have decided to not give anything up for Lent but to eat more fruit and ensure that we eat fish twice a week (every Friday during Lent if we can manage it!). In eating more of these things I will hopefully eat less of the unhealthy stuff! Well I have been trying to be good recently anyway.
Here is my recipe which was excellent....
Ingredients
Makes: 8 pancakes
- 125g plain flour
- 1 teaspoon salt
- 1 teaspoon bicarbonate of soda
- 1 egg
- 250ml buttermilk
- 50g butter, melted
Preparation method
Prep: 5 mins | Cook: 15 mins1.
Preheat and lightly grease a large frying pan.

Mix the flour, salt and bicarb together in a bowl. Add the egg, buttermilk and
butter; stir together lightly, but keep it lumpy. The batter should look thick, spongy and puffy.
3.
Drop 5 tablespoons (75ml) of the batter onto the pan, spreading lightly with the bottom of the spoon. Cook until lightly-browned on each side, 1 to 2 minutes per side.
